And how cute are these? My friend Anna came up with the idea when we had leftover dough- to make balls to put into yogurt, on top of fruit, or whatever other creative idea you can come up with. Thanks Anna!
Look who took herself for a walk this morning? ...In the rain
1 1/2 cup sorghum flour
1/2 cup potato starch
1/4 cup tapioca starch
1/2 cup brown sugar (I used my Homemade Brown Sugar)
1 1/2 tsp cinnamon
3/4 tsp xanthan gum
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup melted coconut oil
3 tbs water
3 tbs honey
1 tsp vanilla
- Preheat oven to 350. Cover 2 cookie sheets with parchment and set aside.
- Mix first 9, dry ingredients, through salt. Whisk to incorporate. Add remaining wet ingredients, and mix well. Roll out dough in between two sheets of parchment, using a rolling pen. Cut the dough into even squares with a sharp knife or pizza cutter. Prick holes into the dough with a fork in an even pattern.
- Bake 15 minutes. Let cool on pan for 10 minutes. (You'll be surprised how much crispier they get after cooling). Then remove from the pan, and store in a cool, dry place.
